Winemaking need not be as complicated as it is made out to be. It is very possible to make a great tasting, vineyard standard wine in your own home and be drinking it with friends within the next 3 months. Technically it is possible to be enjoying your own home made premium quality wine in under 2 weeks but to get a really good standard wine the brewing time is extended slightly.
How to make your own Premium Quality Wine at Home
So how is it done? Most people will tell you that you need decades of experience to make a good standard wine, and although it is true that experience will definitely help it is by no means a prerequisite. The very first wine I made managed to impress everybody who tasted it, and I'm not bragging it was really actually very easy to do. You just need to know how to do it.
First off you need the right ingredients.
You might be surprised to find out that it is not essential to create your wine directly from grapes. More often than not I skip the entire grape crushing, juice gathering process and I simply buy my grape juice off the shelf. If you enjoy crushing grapes then that is fine but for those who like to limit extraneous, non essential activity then I suggest buying your juice. The great thing about making your own wine as opposed to buying wine from the supermarket is that you are in total control of what goes into the production. You can avoid using all the harmful industry chemicals and additives. You can select organic fruits, sugars and juices if you so wish. The other bonus is that you can customise your flavours to include almost any combination of fruits and spices. I will give a great recipe for a Plum wine that you can try, or if you want to try something else you can alternate the ingredients to include your own selections.
So once you have selected your juice you simply need to follow these instructions: These instructions are for making Plum wine so if you want to try a different type of wine simply substitute in your chosen fruit or juice for the plums.
* Step 1) Add 1 Campden tablet to 3 pints of tepid water. Wash and stone the plums and discard the stones. Place the plums immediately into the water and leave for 24 hours.
* Step 2) Add 3 pints of hot water and 1kg of granlated sugar. Stir until the sugar has dissolved and add your brewer's yeast when the mixture has cooled.
* Step 3) Ferment for 4 days, stirring daily, before adding 250ml of white grape concentrate and straining off the mixture into seperate bottles. I usually use 2 litre empty plastic fizzy drinks bottles.
* Step 4) Place a homebrewing cap onto each bottle. This will allow for carbonation to take place during the fermentation process and the pressure valve in the home brewing cap will prevent the bottle from exploding. It will also keep the brew contaminant free. For a non-carbonated drink simply loosen the home brewing cap by 2 rotations.
* Step 5) Continue the fermentation in a warm place out of direct sunlight.
* Step 6) Rack the wine as soon as it has become stable and has stopped fermenting, and rack again after a further 3 weeks, adding a Campden tablet at each racking. Mature for 3 months to obtain the best results, sweetening to taste a few days before bottling.
This may seem like a complicated process but when you give it a try you will realise how easy it really is. And the final product is absolutely amazing.
