Blend the cornstarch and the cold water together then stir into the meat mixture in skillet. Cook over medium heat while stirring constantly until the mixture thickens and boils. Boil, while stirring, for 1 minute. Stir in the bell pepper, mushrooms, celery, and water chestnuts; cover and cook over low heat another 5 to 7 minutes. Just before serving, gently fold in the oranges.
Even if there is a diabetic in your family or among your group of friends, you can make these easy meals and include everyone. The Tomato Chili Con Carne is a satisfying meal that is great for diabetics although it is not considered a 'diabetic' recipe. With meat, vegetables, and especially beans, it is perfect for diabetics to enjoy right along with everyone else. The Beef Skillet Supper has lots of veggies and protein that will counterbalance any sugar you might get from a few bits of the mandarin oranges. Another great recipe everyone can enjoy together!
